On the fifth day of holiday baking Event Garde team member Kate Pojeta shares with us her family’s (better-than-Buckeyes) Peanut Butter Balls recipe for sweet treat to share at the holidays!
Ingredients
- 1 cup margarine - melted
- 4 cups creamy peanut butter
- 7 cups rice crispies
- 1# powdered sugar (about 4 cups)
- 1 1/2 bags semi-sweet chocolate chips
- 1 1/4 - 1 1/2 blocks wax - or shortening (about 1/3 cup)
Instructions
- In large mixing bowl, melt butter, stir in PB (can heat a bit to melt)
- Add powdered sugar and rice crispies
- Separate into 2-3 bowls and chill (easier to roll when chillded & hardened)
- Roll into small balls - can chill again to make dipping easier too
- Slowly melt chocolate chips and wax/shortening in deep bowl
- Use toothpick or skewer to dip balls into chocolate
- Use mini cupcake cups or just place on wax paper to cool
- Keep refrigerated
